Squirrel is becoming a trendy dining option in Scotland
Make sure you are reading the menu VERY carefully if you are vacationing in Scotland in the near future. That intoxicating smell coming from that restaurant that’s getting your tastebuds watering may in fact be squirrel!!!
Chefs in Scotland have started cooking up and serving North American gray squirrel. This is an invasive species that is quickly becoming a tasty alternative for some other dishes.
Scottish chef Paul Wedgwood describes squirrel meat as “… mellow, nutty and a bit gamey. It’s just a really nice flavor, and it’s easy to match,” he also says that chefs that are used to cooking with rabbit would easily be able to make the switch. Wedgwood has even used squirrel in a haggis dish.
Serving squirrel works double duty, not only is it a good substitute for other commonly used meats, but it also helps the environment by keeping the invasive squirrel numbers down.
